Hey guys! I have been wanting to share my go to Mac & Cheese recipe for sometime now and I have finally gotten around to it since I was making it again this weekend. Also, I have been making this since Joseph turned a year old, he is going to be 4 in a couple of weeks, and he still loves it! I can’t get my baby to eat any pasta at the moment but hopefully he comes around soon. This recipe is super easy, healthy and perfect when your meal prepping. I always make a batch and freeze it so it’s always on hand if I need it in a pinch.

I am by no means a great chef, I don’t even measure anything, but here is exactly what I do.

Easy, Healthy Mac & Cheese Recipe

First I cook a box of the small shell pasta in my Fasta Pasta. If you don’t have one, you need it. No more boiling water and straining it, this makes clean up much simpler.

Then on the stove on medium-high heat I melt a tablespoon of butter and stir in a tablespoon of flour. Then I add about a cup to a cup and half of almond milk. Once that starts to simmer I turn the heat on low and add a bag of shredded cheddar cheese and stir until its all melted.

I take it off of the stove and let it sit for about 10 so the sauce can thicken up a bit. I then add my pasta, stirring until all of the pasta is covered in the cheese sauce. Once cooled I transfer them into these OXO containers which are the perfect individual portions for babies, toddlers and kids. I then put them in the freezer so I can conveniently take one out when my son wants some for lunch or dinner.

Also pictured above is my son Joe in the Stokkes Steps Chair. This chair was the answer to my booster seat debacle. Boosters were so messy and hard to clean. This allows my son to properly sit at the kitchen table. It is sturdy, comfortable, and practical. He loves it and so do I! It can also be use from birth when some attachments.
